Ingredients
- Olive oil
- 1 onion
- 350g potatoes
- 6 eggs
- 85g cheese
- Heat the olive oil in a frying pan, add the onion and potatoes and fry for 8 minutes, turning the veg frequently. Meanwhile, whisk the eggs in a large bowl with plenty of salt.
- MIx the potato mixture and stir into the eggs. Put the egg mixture in the pan during 8 minutes. Stir in the cheese.
- Invert the tortilla on a plate and slide the tortilla back into the pan. Cook for 5 minutes until everything is cooked. Pack for a picnic or serve in wedges with salad and bread for an easy supper.
